  • Coarse buckwheat groats — 500 g (1 lb 2 oz)
  • Water — 1 L (4 cups)
  • Salt — 1 tsp
  • Lard or butter — 30 g (2 tbsp)
  • Warm whole milk, to serve — 750 ml (3 cups)

Method

  1. Bring the water to a boil in a heavy-bottomed saucepan and add the salt.
  2. Pour in the buckwheat groats without stirring. Reduce the heat to low, cover, and simmer for 20 minutes until the water is absorbed and a hole forms in the centre of the mass.
  3. Remove from the heat. Add the lard or butter directly into the centre hole.
  4. Using a fork, crumble the cooked groats into small, loose grains, working quickly while hot.
  5. Cover again and let the žganci steam for 5 minutes off the heat before serving.
  6. Divide among bowls and pour warm milk generously over each portion.
