Method

  1. Blanch the carrots and green beans in boiling water for 2 minutes, then drain and cool quickly in cold water.
  2. Heat the oil in a frying pan and sizzle the mustard seeds for 30 seconds until they pop.
  3. Add the garlic, ginger, turmeric and chilli flakes, and cook for 1 minute until fragrant.
  4. Add the blanched vegetables and shredded cabbage, and toss for 2-3 minutes over medium heat.
  5. Stir in the vinegar and salt, then remove from the heat and cool to room temperature.
  6. Transfer to an airtight jar and leave for at least 2 hours before serving to let the flavours develop.
