Chermoula

A vibrant green marinade-condiment of chopped cilantro and parsley, garlic, cumin, paprika, lemon juice or preserved lemon, and olive oil. Functions as both a marinade and a finishing sauce, unlike drier spice pastes.

Flavor Profile

Bright, herbaceous, and tangy, with garlic and cumin depth; heat is optional and usually light (a small amount of chili or harissa is sometimes added).

Culinary Uses

Classic marinade for fish and seafood (especially whole grilled or baked fish); used on chicken and vegetables; spooned over tagines just before serving to add freshness.

Regional Variations

Coastal versions (fish-focused) are looser and more acidic; inland versions used for meat are often thicker and less citrus-forward; some families add preserved lemon rind for extra depth.

Storage

Best used fresh within 2–3 days refrigerated, as the fresh herbs discolor and lose brightness; does not freeze well due to the fresh herb content.

Do not confuse with chimichurri (Argentina) — both are green herb-oil condiments but built from unrelated herb bases (cilantro/parsley/cumin vs. parsley/oregano) and independent traditions.
