A dipping sauce of soy sauce, vinegar, lemon (or a local citrus called kalamansi/lemmai), onion, and hot pepper (often donne' sali, a small local chili), reflecting Guam's blend of Pacific Islander, Spanish, and Asian culinary influences.
Flavor Profile
Salty, sour, and hot in balanced measure, similar in structural concept to Filipino and Vietnamese dipping sauces but with its own distinct local chili and citrus character.
Culinary Uses
Dipping sauce for grilled meats, particularly at Chamorro barbecues (kelaguen and grilled chicken are classic pairings); condiment for rice dishes.
Regional Variations
Fina'denne' agaga ("red" version, with achote/annatto added) is a distinct variant used more as a marinade than a dipping sauce.
Storage
Best made fresh; keeps 3–4 days refrigerated given the fresh onion and citrus content.
