  1. Pack the cauliflower, carrots, celery and garlic into a clean glass jar.
  2. In a saucepan, bring the vinegar, water, salt, honey, coriander seeds and mint to a simmer, stirring until the salt and honey dissolve.
  3. Pour the hot brine over the vegetables until fully submerged.
  4. Seal the jar and let cool to room temperature, then refrigerate.
  5. Leave to pickle for at least 1 week before eating, shaking the jar occasionally.
