Ingredients

  • - 250 ml (1 cup) heavy cream, whipped, for topping

Method

  1. Preheat the oven to 175°C (350°F) and grease the baking dish.
  2. Beat the egg whites to soft peaks, then gradually add half the sugar, beating to stiff, glossy peaks.
  3. In a separate bowl, beat the egg yolks with the remaining sugar and vanilla until pale and thick, then fold in the whole milk.
  4. Sift the flour and baking powder over the yolk mixture and fold in gently, then fold in the whipped egg whites in two additions, keeping the batter light.
  5. Pour into the prepared dish and bake for 25-30 minutes until a skewer comes out clean. Cool completely.
  6. Whisk together the evaporated milk, condensed milk and 120ml cream, then pierce the cooled cake all over with a fork and slowly pour the milk mixture evenly over the top, allowing it to soak in.
  7. Refrigerate for at least 2 hours, or overnight, then top with whipped cream before serving.
