Ingredients
- - 2 cucumbers, thinly sliced
- - 1/2 small red onion, thinly sliced
- - 60g (1/2 cup) freshly grated coconut
- - 2 tbsp lime juice
- - 1 tsp sugar
- - Salt, to taste
Method
- Combine the cucumber and red onion in a mixing bowl.
- Whisk the lime juice, sugar and salt together in a small bowl until the sugar dissolves.
- Pour the dressing over the cucumber and onion and toss well.
- Fold through the grated coconut just before serving.
