Method

  1. Preheat the oven to 180C (350F) and grease and line a 23cm (9in) round cake tin.
  2. Cream the butter and sugar together until pale and fluffy, about 3-4 minutes.
  3. Beat in the eggs one at a time, then stir in the vanilla seeds.
  4. Sift in the flour, baking powder and salt, and fold in gently along with the desiccated coconut.
  5. Fold in the coconut milk until the batter is smooth and evenly combined.
  6. Pour into the prepared tin and bake for 35-40 minutes, until a skewer inserted in the centre comes out clean.
  7. Cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely before slicing.
