Ingredients
- - carrots, julienned: 2 medium (2 medium)

- - white vinegar: 60 ml (1/4 cup)
- - vegetable oil: 3 tbsp (3 tbsp)
- - salt: 1 tsp (1 tsp)
Method
- Blanch the carrots and green beans in boiling water for 2 minutes, then drain and cool quickly in cold water.
- Heat the oil in a frying pan and sizzle the mustard seeds for 30 seconds until they pop.
- Add the garlic, ginger, turmeric and chilli flakes, and cook for 1 minute until fragrant.
- Add the blanched vegetables and shredded cabbage, and toss for 2-3 minutes over medium heat.
- Stir in the vinegar and salt, then remove from the heat and cool to room temperature.
- Transfer to an airtight jar and leave for at least 2 hours before serving to let the flavours develop.
