Method

  1. Combine flour, sugar, cardamom, yeast and salt in a bowl, then stir in the warm coconut milk to form a soft dough.
  2. Knead for 8-10 minutes until smooth and elastic, then cover and leave to rise for 1 hour, or until doubled.
  3. Divide the dough into 8 balls, roll each into a 10cm (4in) circle, then cut into triangles or halves.
  4. Heat the oil in a deep pot to 170C (340F).
  5. Fry the dough pieces in small batches for 2-3 minutes per side until deep golden and puffed.
  6. Lift out with a slotted spoon and drain on paper towels before serving warm.
