Ingredients

  • - Pork shoulder, boneless, skin on — 2 kg (4.4 lb)

Method

  1. A day ahead, rub the pork all over with garlic, cumin, oregano and salt, working the seasoning under the skin where possible; refrigerate overnight.
  2. Mix the parcooked rice, split peas and diced onion together with a little of the pork's own fat to make the stuffing.
  3. Lay the pork out flat, spread the stuffing over the meat, then roll and tie firmly with kitchen twine to enclose the filling, keeping the skin on the outside.
  4. Roast at 150°C (300°F) for 5-6 hours, basting occasionally, until the meat is fall-apart tender.
  5. Increase the oven to 220°C (430°F) for the final 20-30 minutes to crisp and blister the skin.
  6. Rest for 20 minutes before slicing into thick rounds showing the rice-and-pea stuffing, and serve with arepas.
