Ingredients

  • - 1 kg (2.2 lb) mixed shellfish (mussels, clams) in their shells, cleaned
  • - 500 g (1 lb) pork ribs, cut into pieces
  • - 4 chorizo or longaniza sausage links
  • - 4 chicken thighs
  • - 8 small potatoes
  • - 4 milcaos (Chilean potato flatbreads) or substitute boiled potato dumplings
  • - 1 large cabbage, leaves separated
  • - Salt, to taste

Method

  1. Line the base of a very large pot with a layer of outer cabbage leaves.
  2. Add the pork ribs and chicken first, as they take longest to cook.
  3. Layer in the potatoes and sausages.
  4. Top with the shellfish and milcaos, then cover everything with more cabbage leaves.
  5. Add about 250 ml (1 cup) water to the base of the pot, cover tightly, and cook over medium-low heat for 1-1.5 hours without lifting the lid, allowing everything to steam in its own juices.
  6. Check that the shellfish have opened and the meats are cooked through before serving.
  7. Serve directly from the pot at the table, family-style, with the flavorful broth spooned over each portion.
