Method

  1. Place the beef in a large stockpot with the water and bring to a boil, skimming off any foam that rises.
  2. Reduce to a gentle simmer, add the onion, and cook covered for 1 hour until the beef is tender.
  3. Add the carrots, potatoes, pumpkin and corn, and simmer for 20 minutes.
  4. Stir in the rice and cumin, and cook a further 15 minutes until the rice is tender and vegetables are soft.
  5. Season with salt and pepper.
  6. Serve each bowl with a piece of beef, a chunk of each vegetable, broth and rice, scattered with coriander.
