Introduction: Small skewers of spiced, seared beef are a popular way to begin a meal or accompany drinks in Chadian towns, grilled quickly over open coals by street vendors and home cooks alike.
Cultural Background: Small skewers of spiced, seared beef are a popular way to begin a meal or accompany drinks in Chadian towns, grilled quickly over open coals by street vendors and home cooks alike. The spice rub reflects trade-route influences from North Africa and the wider Sahel.
Tips: Do not overcrowd the skewers, as this prevents even charring. Let the meat come to room temperature before grilling for more even cooking.
Variations: Goat or lamb can be used in place of beef. A touch of ground baobab seed or dried chilli flakes can be added to the spice rub for a sharper heat. No authentic vegetarian version exists for this dish; not converted.
Storage: Cooked skewers keep in an airtight container in the refrigerator for up to 2 days.
Reheating: Reheat in a hot dry pan for 1-2 minutes per side, taking care not to overcook the meat further.
