Ingredients
- - 200g (1 cup) wild rice, rinsed
- - 750ml (3 cups) water or vegetable stock
- - 80g (1/2 cup) dried cranberries
- - 60g (1/2 cup) pecans or walnuts, toasted and roughly chopped
- - 2 spring onions, thinly sliced
- - 60ml (4 tbsp) extra virgin olive oil
- - 30ml (2 tbsp) apple cider vinegar
- - 15ml (1 tbsp) pure maple syrup
- - Salt and freshly ground black pepper, to taste
- - 30g (1/2 cup) fresh parsley, chopped
Method
- Bring the water or stock to a boil in a medium saucepan, add the rinsed wild rice, reduce heat to low, cover, and simmer for 45-50 minutes until the grains split open and are tender but still have a slight chew.
- Drain any excess liquid and let the rice cool to room temperature, fluffing occasionally with a fork.
