  • - Vegetable oil (for frying) -- 500 ml (2 cups)

Method

  1. Mash the ripe bananas smoothly in a bowl.
  2. Whisk in the egg, sugar and cinnamon until combined.
  3. Fold in flour and baking powder to form a thick, scoopable batter.
  4. Heat oil to 170°C (340°F) in a frying pan or pot.
  5. Drop tablespoon-sized scoops of batter into the hot oil and fry for 2–3 minutes per side until golden brown and cooked through.
  6. Drain on paper towel and dust with a little extra sugar or cinnamon before serving warm.
