Ingredients

  • - Stock cube -- 1 (1)
  • - Salt and pepper -- to taste (to taste)
  • - Water fufu (fermented cassava fufu), -- for serving (for serving)

Method

  1. Simmer the tripe or cow skin in water with the stock cube until tender, about 45 minutes.
  2. Add the smoked fish and palm oil to the pot and simmer 5 minutes.
  3. Stir in the chopped waterleaf and cook down for 5 minutes until wilted.
  4. Add the shredded eru leaves and ground crayfish; stir well to combine.
  5. Cover and simmer for 15–20 minutes, stirring occasionally, until the eru is tender and the oil is well incorporated.
  6. Season to taste and serve hot alongside water fufu.
