Ingredients

  • - Okra, grated -- 200 g (7 oz)
  • - Nkui bark powder (or extra okra as -- 3 tbsp (3 tbsp)
  • - substitute)
  • - Smoked fish, flaked -- 150 g (5 oz)
  • - Beef or goat meat, cubed -- 300 g (10 oz)
  • - Red palm oil -- 60 ml (1/4 cup)
  • - Njangsa or ground crayfish -- 2 tbsp (2 tbsp)
  • - Water -- 1 litre (4 cups)
  • - Salt and pepper -- to taste (to taste)

Method

  1. Simmer the meat in water with salt until tender, about 40 minutes; reserve the broth.
  2. Grate okra and mix with a little water; strain through a fine sieve to extract the mucilage, discarding pulp.
  3. If using nkui bark powder, dissolve it in warm water and strain similarly.
  4. Return the meat broth to the pot, add palm oil and crayfish, and bring to a gentle simmer.
  5. Stir in the strained okra mucilage in a steady stream, whisking constantly, until the soup thickens to a smooth, slightly stretchy consistency.
  6. Add the meat and smoked fish, season to taste, and simmer 5 more minutes before serving hot.

Introduction: Nkui is a distinctive Bamileke soup thickened not with flour but with a mucilage extracted from a native tree bark and okra, giving it a uniquely silky, stretchy texture.

Cultural Background: Nkui is a distinctive Bamileke soup thickened not with flour but with a mucilage extracted from a native tree bark and okra, giving it a uniquely silky, stretchy texture. Traditionally prepared for honoured guests and special family occasions, it showcases the ingenuity of Western Highlands cooking, where forest and farm ingredients combine into a soup found almost nowhere outside the region.

Tips: Strain the okra mucilage thoroughly for a smooth soup free of fibrous pulp. Stir constantly while adding the thickener to avoid clumping.

Variations: Nkui bark can be hard to find outside Cameroon; extra strained okra alone gives a reasonable home approximation. Add smoked shrimp for extra umami. Replace meat and fish with mushrooms and vegetable broth, and use extra crayfish-free seasoning.

Storage: Refrigerate up to 3 days; the texture stays silky when stored airtight.

Reheating: Reheat gently over low heat, stirring, to avoid breaking the texture.
