Ingredients
- Canned or jarred heart of palm, drained and sliced — 500 g (1 lb)
- Cherry tomatoes, halved — 200 g (7 oz)
- Small red onion, thinly sliced — 1/2
- Fresh parsley, chopped — 3 tbsp
- Olive oil — 3 tbsp
- White wine vinegar or lime juice — 1 1/2 tbsp
- Salt — 1/2 tsp
- Black pepper — 1/4 tsp
- Mixed lettuce leaves — 100 g (4 cups)
Method
- Arrange the lettuce leaves on a platter or in a salad bowl as a base.
- Layer the sliced heart of palm, cherry tomatoes and red onion over the lettuce.
- In a small bowl, whisk together the olive oil, vinegar or lime juice, salt and black pepper until emulsified.
- Drizzle the dressing evenly over the salad just before serving.
- Scatter fresh parsley on top and serve immediately.
