Ingredients

  • - 1 kg (2.2 lb) bone-in chicken thighs and breast
  • - 2.5 litres (10 cups) water
  • - 1 medium onion, chopped
  • - 3 garlic cloves, minced
  • - 2 medium carrots, diced
  • - 150 g (3/4 cup) white rice
  • - 2 tbsp fresh mint, chopped
  • - 2 tbsp olive oil
  • - 1 1/2 tsp salt
  • - 1/4 tsp black pepper

Method

  1. Place the chicken in a large pot with the water, bring to a boil, and skim off any foam that rises to the surface.
  2. Add half the onion and garlic, reduce heat, and simmer gently for 40 minutes until the chicken is fully cooked and tender.
  3. Remove the chicken, let it cool slightly, then shred the meat, discarding bones and skin; strain the stock and return it to the pot.
  4. Heat olive oil in a small pan and saute the remaining onion and garlic until soft, then add to the strained stock along with the carrots.
  5. Simmer for 10 minutes, then add the rice and cook for a further 15-18 minutes until the rice is tender and the soup has thickened slightly.
  6. Return the shredded chicken to the pot, season with salt and pepper, and simmer for 5 more minutes.
  7. Stir in fresh mint just before serving.
