Bosnian Pot Stew

Ingredients
- - 500 g (1.1 lb) beef chuck, cubed
- - 300 g (10.5 oz) lamb shoulder, cubed
- - 2 onions, sliced
- - 3 carrots, sliced
- - 2 potatoes, chunked
- - 1/2 head cabbage, chunked
- - 2 bell peppers, sliced
- - 4 cloves garlic, whole
- - 2 bay leaves
- - 1 tsp paprika
- - 500 ml (2 cups) beef stock
- - Salt and pepper, to taste
Method
- Preheat the oven to 150°C (300°F).
- Layer half the beef and lamb in the bottom of the pot.
- Layer half the onion, carrot, potato, cabbage and pepper on top.
- Season the layer with salt, pepper and paprika, and tuck in the garlic cloves and bay leaves.
- Repeat with the remaining meat and vegetables to build a second layer, seasoning again.
- Pour the stock gently down the side of the pot without disturbing the layers.
- Cover tightly and cook in the oven for 3.5-4 hours, undisturbed, until the meat is fall-apart tender.
- Serve directly from the pot, spooning through all the layers.
