Ingredients

  • - 1.2 kg (2.6 lb) pork trotters and shank, mixed
  • - 1 onion, quartered
  • - 2 carrots, peeled
  • - 3 bay leaves
  • - 6 black peppercorns
  • - 4 cloves garlic, minced
  • - 1.5 litres (6 cups) water
  • - 1 tsp salt
  • - 1 hard-boiled egg, sliced, for garnish

Method

  1. Place the pork pieces, onion, carrots, bay leaves and peppercorns in a large pot with the water.
  2. Bring to a boil, then reduce heat and simmer gently, skimming foam, for 3-4 hours until the meat falls off

  4. Remove meat and vegetables; strain the stock through a fine sieve.
  5. Pick the meat from the bones and shred finely, discarding skin, fat and bones.
  6. Stir the shredded meat and minced garlic into the strained stock, and season with salt.
  7. Pour into serving dishes or a terrine mould, adding egg slices for garnish.
  8. Refrigerate for at least 6 hours, or overnight, until fully set.
  9. Serve chilled, sliced or spooned directly from the dish.
