Ingredients

  • - 500 g Waxy potatoes (1 lb 2 oz)
  • - 300 g Fine green beans, trimmed (10 oz)
  • - 150 g Smoked bacon lardons (5 oz)
  • - 2 Shallots, thinly sliced (2)
  • - 30 ml Red wine vinegar (2 tbsp)
  • - 20 ml Vegetable oil (4 tsp)
  • - 10 g Fresh parsley, chopped (2 tbsp)

Method

  1. Boil the potatoes in salted water until just tender, about 15 minutes. Drain and slice while still warm.
  2. Blanch the green beans in boiling salted water for 4–5 minutes until tender but still bright green; drain.
  3. Fry the bacon lardons in a dry pan until crisp and golden, then remove with a slotted spoon, keeping the rendered fat in the pan.
  4. Add the shallots to the same pan and cook briefly in the bacon fat until just softened.
  5. Deglaze the pan with red wine vinegar, then whisk in the vegetable oil to make a warm dressing.
  6. Combine the warm potatoes, green beans and bacon in a large bowl, pour over the warm dressing, and toss gently.
  7. Scatter with parsley and serve immediately while still warm.
