Ingredients
- - 4 cups puffed rice (muri)
- - 1 small onion, finely chopped
- - 1 tomato, finely chopped
- - 1 green chilli, finely chopped
- - 2 tbsp roasted peanuts
- - 2 tbsp boiled chickpeas
- - 1 tbsp fried lentils (bombay mix or similar), optional
- - 2 tbsp fresh coriander, chopped
- - 1 tbsp mustard oil
- - 1/2 tsp roasted cumin powder
- - 1/2 tsp black salt
- - 1/2 tsp red chilli powder
- - 1 tsp lime juice
- - Salt, to taste
Method
- Place the puffed rice in a large mixing bowl.
- Add the onion, tomato, green chilli, roasted peanuts, chickpeas and fried lentils.
- Drizzle over the mustard oil and lime juice.
- Sprinkle in the roasted cumin powder, black salt, chilli powder and salt to taste.
- Toss everything together vigorously for about a minute so the puffed rice absorbs the seasoning evenly without going soggy.
- Stir through the fresh coriander and serve immediately in paper cones or bowls.
