Marag Laham (Bahraini Meat and Vegetable Soup)

Ingredients
- - 500 g (1.1 lb) bone-in lamb or beef pieces
- - 2 tbsp vegetable oil
- - 1 onion, chopped
- - 3 garlic cloves, minced
- - 1 tsp ground turmeric
- - 1 tsp Bahraini baharat
- - 1 cinnamon stick
- - 2 tomatoes, chopped
- - 1.2 litres (5 cups) water
- - 1 potato, cubed
- - 1 carrot, sliced
- - 1 courgette (zucchini), sliced
- - 1 1/2 tsp salt, or to taste
- - 1/2 tsp black pepper
- - 2 tbsp fresh coriander, chopped
Method
- Heat the oil in a large pot and brown the meat pieces on all sides.
- Add the onion and cook until softened, then stir in the garlic, turmeric, baharat and cinnamon stick for 1 minute.
- Add the tomatoes and cook for 2-3 minutes until softened.
- Pour in the water, bring to a boil, skimming off any foam, then reduce heat and simmer covered for
- hour until the meat is tender.
- Add the potato and carrot, simmer for 10 minutes, then add the courgette, salt and pepper, cooking for a further 10 minutes.
- Remove the cinnamon stick, adjust seasoning, and garnish with fresh coriander before serving hot.
