Ingredients

  • Dark rum — 45 ml (1.5 oz)
  • Coconut rum — 30 ml (1 oz)
  • Pineapple juice — 90 ml (3 oz)
  • Orange juice — 30 ml (1 oz)
  • Grenadine — 15 ml (0.5 oz)
  • Lime juice — 1 tbsp
  • Ice, for serving
  • Pineapple wedge and maraschino cherry, to garnish

Method

  1. Fill a cocktail shaker with ice.
  2. Add dark rum, coconut rum, pineapple juice, orange juice and lime juice.
  3. Shake well for about 15 seconds.
  4. Fill a highball glass with fresh ice and strain the cocktail over it.
  5. Slowly pour grenadine over the back of a spoon so it sinks and creates a layered sunset effect.
  6. Garnish with a pineapple wedge and cherry before serving.
