Ingredients

  • - 1.3 kg (3 lb) bone-in chicken pieces
  • - 2 tbsp curry powder, divided

  • - 2 tbsp vegetable oil
  • - 1 onion, sliced
  • - 2 cloves garlic, minced
  • - 1 tsp fresh ginger, grated
  • - 1 tomato, chopped
  • - 1 potato, peeled and cubed
  • - 1.5 cups (360 ml) chicken stock
  • - 1/2 scotch bonnet pepper, whole
  • - Salt and black pepper, to taste
  • - Cooked white rice, to serve

Method

  1. Rub chicken with lime juice and 1 tbsp curry powder; marinate 20 minutes if time allows.
  2. Heat oil in a large pot over medium-high heat. Brown chicken pieces on all sides, then remove and set aside.
  3. In the same pot, sauté onion, garlic and ginger until fragrant, about 3 minutes.
  4. Stir in remaining curry powder and cook 1 minute until aromatic.
  5. Add tomato, potato, stock and scotch bonnet. Return chicken to the pot.
  6. Bring to a boil, then reduce heat, cover and simmer 30-35 minutes until chicken is tender and cooked through.
  7. Remove scotch bonnet, season with salt and pepper, and simmer uncovered 5 minutes to thicken the sauce.
  8. Serve hot over white rice.
