Ingredients
- - 2 eggplants
- - 4 tomatoes
- - 3 green bell peppers
- - 1-2 hot green peppers (to taste)
- - 1 onion, finely diced
- - 3 garlic cloves, minced
- - 3 tbsp olive oil
- - 2 tbsp fresh coriander, chopped
- - 2 tbsp fresh dill, chopped
- - 1 tsp salt
- - 1/2 tsp black pepper
Method
- Grill the eggplants, tomatoes, bell peppers and hot peppers directly over charcoal or an open flame, turning often, until the skins are blackened and the flesh is soft, 10-15 minutes.
- Wrap the vegetables in foil or a bowl covered with a plate and rest for 10 minutes to loosen the skins.
- Peel off the charred skins and roughly chop all the grilled vegetables.
- Combine the chopped vegetables with onion, garlic, olive oil, coriander and dill.
- Season with salt and pepper, mix well and serve warm or at room temperature.
