Ingredients

  • - 2 medium eggplants, sliced into 1 cm (0.4 in) rounds
  • - 1 tsp salt, for salting eggplant
  • - 4 tbsp vegetable oil
  • - 3 tomatoes, sliced
  • - 4 garlic cloves, minced
  • - 2 tbsp fresh coriander, chopped
  • - 2 tbsp fresh dill, chopped
  • - 1/2 tsp black pepper
  • - 1 tbsp white wine vinegar

Method

  2. Fry the eggplant slices in oil over medium heat until golden on both sides, about 3 minutes per side.
  3. Drain on paper towel.
  4. Layer the fried eggplant and tomato slices alternately on a serving platter.
  5. Scatter with minced garlic, coriander and dill, and season with black pepper.
  6. Drizzle with vinegar and a little of the frying oil, and rest 10 minutes before serving to let the flavours meld.
