  • - 1 tbsp plain flour
  • - 1 litre (4 cups) water or light stock
  • - 2 tbsp butter
  • - 1 small onion, finely chopped
  • - 2 tbsp fresh coriander or mint, chopped
  • - Salt, to taste

Method

  1. Whisk the yogurt, egg and flour together thoroughly until smooth to help stabilise the yogurt during cooking.
  2. Pour into a large saucepan with the water or stock and bring to a gentle simmer, stirring constantly in one direction to prevent curdling.
  3. Add the bulgur and continue simmering on low heat for 20-25 minutes, stirring occasionally, until the wheat is tender and the soup has thickened.
  4. Season with salt.
  5. In a small pan, melt the butter and sauté the onion until golden.
  6. Stir most of the herb into the soup and use the buttery onion as a topping for each bowl, garnished with remaining herbs.
