Armenian Dolma (Stuffed Grape Leaves)

Ingredients
- - 40 preserved or fresh grape leaves
- - 300g (10.5oz) minced lamb or beef
- - 150g (3/4 cup) short-grain rice, rinsed
- - 1 onion, finely chopped
- - 2 tbsp fresh mint, chopped
- - 1/2 tsp ground cinnamon
- - 1/2 tsp ground allspice
- - Salt and pepper, to taste
- - 2 tbsp tomato paste
- - 500ml (2 cups) water or stock
- - 2 tbsp butter, melted
- - Juice of 1 lemon
- - Plain yogurt, for serving
Method
- If using fresh grape leaves, blanch in boiling water for 1-2 minutes until pliable; if preserved, rinse well.
- Mix minced meat, rice, onion, mint, cinnamon, allspice, salt and pepper in a bowl.
- Lay a grape leaf vein-side up, place a spoonful of filling near the stem, fold sides in and roll tightly into a small log.
- Line the base of a pot with a few spare leaves to prevent sticking.
- Arrange the rolled dolma tightly in concentric circles in the pot.
- Dissolve the tomato paste in water/stock and pour over the dolma.
- Place a small heatproof plate on top of the dolma to keep them submerged.
- Cover and simmer gently for 45-50 minutes until the rice is fully cooked.
- Drizzle with melted butter and lemon juice before serving warm with yogurt.
