Ingredients
- - 1 kg (2.2 lb) zapallo (butternut or calabaza squash), peeled and cubed
- - 1 onion, chopped
- - 2 garlic cloves, chopped
- - 1 carrot, chopped
- - 1 litre (4 cups) vegetable or chicken stock
- - 100 ml (1/3 cup + 1 tbsp) cream
- - 2 tbsp butter
- - Pinch of nutmeg
- - Salt and pepper, to taste
- - Toasted pumpkin seeds, to garnish
Method
- Melt the butter in a pot and cook the onion, garlic and carrot until softened, about 6 minutes.
- Add the squash and stock, bring to a boil, then simmer 20-25 minutes until the squash is very tender.
- Blend until completely smooth using an immersion blender or standing blender.
- Stir in the cream and nutmeg, season with salt and pepper, and warm through gently without boiling.
- Serve hot, garnished with toasted pumpkin seeds.
