Ingredients

  • - 400 g (14 oz) fresh conch meat, tenderised and finely diced
  • - Juice of 4 limes
  • - Juice of 1 orange
  • - 1 small red onion, finely diced
  • - 1 small sweet pepper, finely diced
  • - 1 small tomato, deseeded and finely diced
  • - 1/2 scotch bonnet pepper, very finely minced (seeds removed for less heat)
  • - 2 tbsp (2 tbsp) fresh coriander, chopped
  • - Salt and black pepper, to taste
  • - 1 tbsp (1 tbsp) olive oil

Method

  1. Tenderise the conch meat by pounding gently with a mallet, then dice it very finely.
  2. Place the diced conch in a non-reactive bowl and pour over the lime and orange juice, ensuring the conch is fully submerged.
  3. Cover and refrigerate for at least 1 hour, or up to 3 hours, stirring occasionally, until the conch turns opaque and firm.
  4. Drain off most of the excess juice, reserving 2–3 tablespoons.
  5. Add the red onion, sweet pepper, tomato, scotch bonnet and coriander to the conch. Toss to combine.
  6. Season with salt, black pepper and olive oil. Toss again and serve chilled.
