Ingredients

Method
- For the pastry, rub the cold butter into the flour and sugar until the mixture resembles fine breadcrumbs. Add the egg and enough cold water to bring the dough together. Wrap and chill for 30 minutes.
- Preheat the oven to 190°C (375°F). Roll out the pastry and line the tart tin, trimming excess edges. Prick the base with a fork, line with baking paper and baking beans, and blind bake for 12 minutes. Remove the beans and paper and bake for a further 5 minutes until lightly golden. Set aside.
- For the filling, combine the desiccated coconut, coconut milk, sugar, eggs, vanilla, nutmeg and cinnamon in a bowl and mix well.
- Pour the coconut filling into the pre-baked tart shell, spreading evenly.
- Reduce the oven to 170°C (340°F) and bake for 30-35 minutes until the filling is set and lightly golden on top.
- Cool completely on a wire rack before slicing.
