Ingredients

  • - Potatoes, thinly sliced — 400g (2 1/2 cups)
  • - Eggs — 6 (6)
  • - Botifarra sausage (or other cooked pork sausage), sliced — 150g (5 oz)
  • - Onion, thinly sliced — 100g (1 small)
  • - Olive oil — 80ml (1/3 cup)
  • - Salt — 5g (1 tsp)

Method

  1. Heat olive oil in a frying pan and cook the potato slices and onion gently over low heat until soft, about 15 minutes.
  2. Add the sliced sausage and cook a further 3-4 minutes.
  3. Drain excess oil, reserving a little in the pan.
  4. Beat the eggs with salt in a large bowl, then fold in the potato, onion and sausage mixture.
  5. Pour the mixture back into the pan and cook over medium-low heat until the base is set, about 6-8 minutes.
  6. Place a large plate over the pan, flip the omelette onto it, then slide it back into the pan to cook the other side for a further 4-5 minutes.
