Ingredients
- - Red bell peppers — 400g (3 medium)
- - Tomatoes — 400g (3 medium)
- - Garlic, minced — 5g (1 clove)
- - Olive oil — 40ml (3 tbsp)

- - Lemon juice — 15ml (1 tbsp)

Method
- Char the peppers and tomatoes directly over a flame or roast at 220°C (425°F) until blistered and soft, about 20-25 minutes.
- Let cool, then peel off the charred skins and remove seeds from the peppers.
- Chop the peppers and tomatoes finely.
- Combine with garlic, olive oil, cumin, lemon juice and salt.
- Mix well and let sit for 10 minutes before serving to allow the flavours to meld.
