Ingredients
- - Bell peppers, tops removed and seeded — 6 medium (6 medium)

Method
- Preheat oven to 190°C (375°F).
- Combine ground beef, rice, onion, parsley, salt and pepper in a bowl.
- Stuff each pepper with the meat and rice mixture, leaving a little room for the rice to expand.
- Stand the peppers upright in a baking dish.
- Pour the tomato passata around the peppers and drizzle with olive oil.
- Cover with foil and bake for 45 minutes, then uncover and bake a further 15 minutes until the peppers are tender and the tops are lightly browned.
