Ingredients

  • - White cabbage, sliced — 300g (3 cups)
  • - Carrots, sliced — 200g (1 1/3 cups)
  • - Cauliflower florets — 200g (2 cups)
  • - Red bell pepper, sliced — 150g (1 medium)
  • - White vinegar — 500ml (2 cups)
  • - Water — 500ml (2 cups)
  • - Salt — 30g (2 tbsp)
  • - Bay leaves — 2 (2)
  • - Black peppercorns — 5g (1 tsp)

Method

  1. Pack the cabbage, carrot, cauliflower and pepper tightly into a large sterilised jar.
  2. Bring vinegar, water, salt, bay leaves and peppercorns to a boil in a saucepan.
  3. Pour the hot brine over the vegetables, ensuring they are fully submerged.
  4. Seal the jar and let cool to room temperature.
  5. Refrigerate and allow to pickle for at least 5-7 days before eating, for the best flavour.

Introduction: A tangy, crunchy mix of pickled cabbage, carrot, cauliflower and pepper, a staple accompaniment on Albanian tables through the winter.

Cultural Background: Turshi is prepared in large batches every autumn, when vegetables are cheapest and most abundant, to be enjoyed as a bright, acidic counterpoint to heavier winter meals.
