Introduction: Herb-flecked, spiced meatballs with a tender crumb, fried until deeply golden and served with a squeeze of lemon.

Cultural Background: Qofte are found at nearly every Albanian gathering, sold at food stalls and served at home alike, their exact seasoning varying slightly from family to family.

Tips: Chilling the mixture makes shaping much easier and helps the qofte hold together while frying. Don’t overcrowd the pan, or the qofte will steam rather than fry crisp.

Variations: Add crumbled feta into the mixture for a creamier centre. Grill instead of frying for a lighter version.

Vegetarian/Vegan: No authentic vegetarian version exists for this meat-based appetizer.

Serving Suggestions: Serve with lemon wedges and a simple yogurt dip.

Storage: Refrigerate cooked qofte for up to 3 days.

Reheating: Reheat in a dry pan over medium heat or in the oven; avoid microwaving to preserve texture.

FAQs:

Q: Why are my qofte falling apart while frying?

A: This usually means the mixture needs a longer chill, or slightly more bread to bind it.

Q: Can these be baked instead of fried?

A: Yes — bake at 200°C (400°F) for 20 minutes, turning halfway, though the texture will be less crisp.
