Method

  1. Salt the eggplant slices and let sit for 15 minutes to draw out moisture; pat dry.
  2. Fry the slices in batches until golden on both sides; drain on paper towel.
  3. In a saucepan, sauté half the garlic, then add tomatoes and salt; simmer for 10 minutes into a thick sauce.
  4. Layer the fried eggplant into the tomato sauce and simmer together for 5 minutes.
  5. Mix the yogurt with the remaining garlic and spread over a serving plate.
  6. Arrange the eggplant and tomato sauce over the yogurt and sprinkle with dried mint.
