Ingredients
- All-purpose flour — 300 g (2 1/2 cups)
- Water — 180 ml (3/4 cup)
- Salt — 5 g (1 tsp)
- Potatoes, boiled and mashed — 400 g (2 cups)
- Spring onion, chopped — 30 g (1/3 cup)
- Ground coriander — 3 g (1/2 tsp)
- Red chilli flakes — 2 g (1/2 tsp)
- Vegetable oil, for frying — 60 ml (1/4 cup)
- Plain yogurt, to serve — 200 g (3/4 cup)
Method
- Combine flour, salt and water into a soft dough; knead for 5 minutes, then rest for 20 minutes.
- Mix the mashed potato with spring onion, coriander and chilli flakes.
- Divide the dough into 4 balls and roll each into a thin oval.
- Spread filling over one half of each oval, fold over, and press the edges to seal.
- Heat oil in a flat pan over medium heat and fry each bolani for 3-4 minutes per side until golden and crisp.
- Drain briefly and serve hot with plain yogurt.
