Dingle Bay Seafood Fritters with Garlic Dip

Ingredients

  • 200g mixed raw fish fillets (cod, haddock, or salmon), cut into very small dice
  • 100g plain flour
  • 1 tsp baking powder
  • 1 large egg, beaten
  • approx. 75ml milk
  • 2 spring onions, finely sliced; 1 tbsp fresh parsley, chopped
  • Vegetable oil (for shallow frying), and garlic mayo to serve

Method

  1. In a large bowl, whisk together the plain flour, baking powder, a pinch of salt, and black pepper.
  2. Whisk the beaten egg and milk together in a jug, then pour into the flour mixture, whisking until a thick, smooth batter forms.
  3. Fold the tiny pieces of raw diced fish, sliced spring onions, and fresh chopped parsley directly into the batter.
  4. Heat a shallow layer of vegetable oil in a large frying pan over medium-high heat.
  5. Drop tablespoons of the seafood batter into the hot oil, flattening them slightly. Fry for 3-4 minutes on each side until deeply golden-brown, crispy, and the fish inside is cooked through.
  6. Drain on kitchen paper and serve hot with a side of garlic mayonnaise or tartar sauce.
