Ingredients

  • 75g mature cheddar cheese, finely grated
  • 1/4 red onion or 2 spring onions, extremely finely diced
  • 2 tbsp mayonnaise
  • A pinch of black pepper
  • 2 slices of fresh granary or white bread

Method

  1. In a small bowl, combine the finely grated cheddar and the finely diced onion.
  2. Add the mayonnaise and black pepper, stirring vigorously until it forms a thick, cohesive savory salad paste.
  3. Spread the mixture thickly between two slices of fresh bread. Cut into triangles and serve immediately.

A classic retro filling found in every local Irish pub and petrol station deli counter. Finely grated cheese and red onion are bound in mayonnaise to make a rich, savoured spread.
