Ingredients

  • 1 sheet of pre-rolled ready puff pastry
  • 4 high-quality jumbo Irish pork sausages
  • 1 egg, beaten
  • 1 tsp dried sage or thyme (optional)
  • Sesame seeds (optional, for topping)

Method

  1. Preheat your oven or air fryer to 200°C (180°C fan).
  2. Unroll the puff pastry sheet. Slice the sausage skins and squeeze the meat out into a bowl, mixing with the dried herbs if desired.
  3. Form the sausage meat into a long log down the center of the pastry sheet.
  4. Brush one edge of the pastry with beaten egg, then roll the pastry over the meat to enclose it tightly, sealing at the egg-washed seam.
  5. Cut the long roll into 8 small bite-sized pieces. Slice two little slashes into the top of each roll, brush with the remaining egg wash, and sprinkle with sesame seeds.
  6. Bake for 15 minutes (or air fry at 190°C for 12-14 mins) until the pastry is puffed and golden and the meat is thoroughly cooked.

No Irish hot deli counter is complete without jumbo sausage rolls. This rapid home version uses supermarket puff pastry and premium pork sausages for a quick afternoon snack.
