Ingredients
- 1/2 traditional French baguette, sliced into rounds
- 150g traditional Irish black pudding
- 3 tbsp smooth apple sauce
- 1 tbsp olive oil or butter
- Fresh thyme leaves (for garnish)
Method
- Preheat your oven or air fryer to 190°C. Lightly brush the baguette slices with olive oil and toast for 4-5 minutes until crisp.
- Remove the outer skin from the black pudding and cut it into rounds or crumble it.
- Heat a small frying pan over medium-high heat with a knob of butter. Fry the black pudding for 3 minutes on each side until cooked through and slightly crispy on the edges.
- To assemble, spread a teaspoon of apple sauce over each toasted baguette slice, top with a piece of hot black pudding, and garnish with fresh thyme leaves.
