Ingredients

  • 1/2 traditional French baguette, sliced into rounds
  • 150g traditional Irish black pudding
  • 3 tbsp smooth apple sauce
  • 1 tbsp olive oil or butter
  • Fresh thyme leaves (for garnish)

Method

  1. Preheat your oven or air fryer to 190°C. Lightly brush the baguette slices with olive oil and toast for 4-5 minutes until crisp.
  2. Remove the outer skin from the black pudding and cut it into rounds or crumble it.
  3. Heat a small frying pan over medium-high heat with a knob of butter. Fry the black pudding for 3 minutes on each side until cooked through and slightly crispy on the edges.
  4. To assemble, spread a teaspoon of apple sauce over each toasted baguette slice, top with a piece of hot black pudding, and garnish with fresh thyme leaves.
