Irish Cheddar & Ballymaloe Relish Toastie

Ingredients
- 2 thick slices of white farmhouse bread
- 1.5 tbsp Ballymaloe tomato relish
- 60g mature Irish cheddar, sliced or grated
- 15g salted Irish butter, softened
Method
- Spread the softened butter evenly on one side of each slice of bread (the buttered sides will face outward in the pan).
- Flip the bread over. Spread the tomato relish over the unbuttered side of one slice.
- Top the relish with the grated or sliced cheddar cheese, and place the second slice of bread on top, buttered side facing up.
- Heat a non-stick frying pan over medium heat. Toast the sandwich for 3-4 minutes per side, pressing down gently, until the bread is golden-brown and the cheddar is beautifully melted.
