Creamy Black Pudding Leek Sauté

Ingredients
- 2 large leeks, washed and sliced into thick rounds
- 100g Irish black pudding, crumbled
- 30g Irish butter
- 50ml double cream
- A pinch of ground nutmeg; Salt and black pepper
Method
- Melt the butter in a large frying pan over medium heat. Add the crumbled black pudding and fry for 3 minutes until it starts to get crisp.
- Add the sliced leeks to the pan with the pudding, tossing well to coat them in the flavorful butter.
- Sauté for 5-6 minutes until the leeks are soft, sweet, and translucent.
- Pour in the double cream and add a tiny pinch of ground nutmeg. Stir well and let it bubble gently for 1 minute until the cream thickens slightly and binds everything together. Season to taste.
