Ingredients

  • 150g cooked peeled Atlantic prawns
  • 100g white crab meat (or flaked white fish flakes)
  • 3 tbsp mayonnaise
  • 1 tsp fresh dill, finely chopped
  • Squeeze of fresh lemon juice
  • 2 thick slices of traditional brown soda bread
  • Salted butter and thin slices of cucumber for the base

Method

  1. In a medium bowl, combine the mayonnaise, chopped fresh dill, and lemon juice. Season lightly with black pepper.
  2. Gently fold the cooked prawns and white crab meat into the seasoned mayonnaise until thoroughly coated.
  3. Take your slices of fresh brown soda bread and butter them generously.
  4. Lay a few thin slices of cucumber across the buttered bread—this acts as a fresh barrier and adds a lovely crunch.
  5. Spoon a mountain of the creamy seafood mixture high over the cucumber layer. Garnish with an extra dusting of black pepper or a sprig of dill, and serve open-faced with a knife and fork.
