Ingredients

  • 2 thick slices of crusty granary or sourdough bread
  • 3-4 thin slices of cold cooked Irish spiced beef
  • 1 thick slice of mature Irish cheddar or white farmhouse cheese
  • 1 tbsp sweet pickle relish or chutney
  • A small handful of fresh peppery watercress or rocket leaves
  • Salted butter

Method

  1. Lay out your slices of crusty bread and spread both generously right to the edges with salted butter.
  2. Spread the sweet pickle relish or chutney evenly over the buttered surface of the bottom slice.
  3. Layer the cold spiced beef ribbons neatly over the relish.
  4. Top the meat with the slice of mature farmhouse cheese and the fresh peppery watercress leaves.
  5. Close the sandwich firmly with the second slice of bread and cut cleanly in half with a sharp bread knife.

An upscale deli-style lunch sandwich using traditional Cork spiced beef. The deeply aromatic, spiced notes of the cold beef pair magnificently with a sharp pickle relish and mature farmhouse cheese.
