Ingredients
- 2 thick slices of crusty granary or sourdough bread
- 3-4 thin slices of cold cooked Irish spiced beef
- 1 thick slice of mature Irish cheddar or white farmhouse cheese
- 1 tbsp sweet pickle relish or chutney
- A small handful of fresh peppery watercress or rocket leaves
- Salted butter
Method
- Lay out your slices of crusty bread and spread both generously right to the edges with salted butter.
- Spread the sweet pickle relish or chutney evenly over the buttered surface of the bottom slice.
- Layer the cold spiced beef ribbons neatly over the relish.
- Top the meat with the slice of mature farmhouse cheese and the fresh peppery watercress leaves.
- Close the sandwich firmly with the second slice of bread and cut cleanly in half with a sharp bread knife.
