Ingredients

  • 1 demi-baguette (bake-at-home style works best)
  • 3 crispy chicken goujons (breaded or spicy)
  • 15g salted Irish butter or garlic mayonnaise
  • 50g mature cheddar cheese, grated
  • Optional extras: Sliced red onion, sweetcorn, or lettuce

Method

  1. Bake the demi-baguette according to instructions until golden and ultra-crusty. At the same time, cook your chicken goujons in the oven or air fryer until deeply crispy.
  2. Slice the warm baguette open down the center, keeping it attached at the back hinge.
  3. Slather the warm bread generously with salted butter or a layer of garlic mayo.
  4. Add any cold fillings like lettuce or sweetcorn, then layer the hot chicken goujons tightly inside.
  5. Top immediately with a heavy handful of grated cheddar cheese so it melts from the residual heat of the chicken and bread. Press firmly together, wrap in foil for 1 minute to compress, then slice diagonally.
